“German silicone” is on two listings. One of them names the company.
Something we noticed while gathering these products: the phrase Best German Silicone appears in the titles of mats from unrelated brands, which is usually the sign of a stock phrase rather than a specification.
But one of them backs it up. MMmat says it uses WACKER silicone — and WACKER Chemie is a real, large German chemical manufacturer that genuinely produces silicone raw materials for industry.
Naming your upstream supplier is an unusual thing for a kitchen product to do. It is checkable, it is specific, and it is the difference between “German silicone” as a vibe and “German silicone” as a purchasing decision the maker actually made. On a page where three listings simply say “food grade”, that is the most substantive materials line available.
It also matters because silicone quality genuinely varies. Cheaper silicone is sometimes extended with fillers, which can make a mat degrade faster, develop a persistent greasy feel, or retain odors. That is the accurate description of every mat here, and only this seller writes it down. Readers of this site will know how rarely that happens.
And the perforation is a genuinely different product. A microperforated mat has thousands of tiny holes, so steam escapes and heat reaches the underside of what you are baking. These are two different tools and most keen bakers end up owning both.
Solid mats are the all-purpose choice. Nothing leaks through, so they handle runny batters, caramel, melted cheese and loose doughs. They also insulate slightly, which makes them gentle on cookie bottoms — helpful if your oven runs hot, unhelpful if you want a crisp base.
