The short version
No, not reliably. Organic certification controls how a crop is grown: no synthetic pesticides, no synthetic fertilizers, no genetic engineering. It says nothing about the lead, arsenic and cadmium already sitting in a field’s soil, in its irrigation water, or in the dust on a drying yard, and nothing in the USDA organic standard requires anyone to test the finished food for metals.
What actually moves your exposure is which foods you eat and how often, where those foods were grown, how they were processed and cooked, and whether the brand publishes a test result. Organic still earns its price on pesticides. For heavy metals it is simply the wrong tool.
Why organic certification does not lower heavy metals
Lead, arsenic, cadmium and mercury are elements. They are part of the rock that soil forms from, so every field on earth contains some, and the amount varies enormously with geology. On top of that natural baseline sits a century of human additions: lead from old gasoline and paint settling onto farmland, lead arsenate that orchards sprayed on apples for decades, cadmium carried in some mineral fertilizers, and metals in irrigation water drawn from contaminated wells or rivers.
None of that washes out when a farm converts to organic. A field needs three years without prohibited substances to be certified, but the metals already in the ground do not leave on any such schedule. A plant growing there takes up what the soil offers regardless of the label its grower is working toward.
The organic standard is written around inputs, the things a farmer adds. It lists which fertilizers, pest controls and processing aids are allowed. It has no limit for metals in the soil and no limit for metals in the harvested food, and certifiers do not test for them. As the independent testing lab ConsumerLab puts it, testing for contamination with heavy metals such as lead, cadmium and arsenic is not required for a product to carry the USDA Organic seal.
In some categories the organic version has tested higher. ConsumerLab found greater cadmium in organic-labeled dark chocolate and cocoa products than in their conventional counterparts, which it attributed to the soils in the regions growing organic cacao rather than to anything organic farming does. The point is not that organic is worse. It is that the seal tells you nothing either way.
Why low levels of heavy metals in food still matter
The metals in food rarely cause anything you would notice from a single meal. The concern is accumulation. Lead, cadmium and inorganic arsenic are not nutrients, the body has no use for them, and some of what you absorb stays for years: lead is stored in bone, and cadmium builds up in the kidneys, where it has a half-life measured in decades. A small amount eaten every day adds up in a way a large amount eaten once does not.
Children carry the most risk. The CDC has said that no safe blood lead level in children has been identified, because even low exposure is associated with effects on learning and attention. The FDA’s stated reason for its arsenic limit in infant rice cereal is that inorganic arsenic exposure is associated with neurodevelopmental effects. For adults, long-term exposure to inorganic arsenic is linked to several cancers, cadmium to kidney damage and weaker bones, and lead to higher blood pressure.
That is why the useful question is never whether a food contains any heavy metals, since nearly everything grown in soil does, but how much you eat of the foods that carry the most, and how often. It is also why this matters more during pregnancy and for young children than for most adults, and more for someone who eats the same rice, chocolate or protein powder every day than for someone who varies their diet.
Where lead, arsenic and cadmium get into food
Each metal has its own route into food, and that route decides which foods carry it and whether you can do anything about it.

The difference between surface lead and absorbed cadmium matters more than it sounds. Researchers tracing cacao found that lead was low when beans came out of the pod and climbed during the days they spent drying in the sun, collecting on the outer shell as dust settled on them. Cadmium, by contrast, travels up from the soil through the tree and ends up inside the bean. Better handling can cut lead substantially. Nothing short of different soil cuts cadmium.
The foods where heavy metals matter most
Cocoa powder and dark chocolate
Chocolate is the category that brought heavy metals into ordinary conversation. When Consumer Reports tested 28 dark chocolate bars in 2022, every one contained detectable lead and cadmium, and for 23 of them an ounce a day would push an adult past a level its experts consider potentially harmful for at least one metal. Its 2023 follow-up across 48 chocolate products found detectable lead and cadmium in every item tested, including cocoa powders, two of which came in high for lead.
Two practical patterns come out of that testing. Darker means more cocoa solids and therefore more of whatever metals the cocoa carries, which is why milk chocolate tested lower. And results vary so much between brands and batches that rotating what you buy spreads the risk. Rice and rice-based foods
Rice is unusually good at absorbing inorganic arsenic, the more toxic form, because it is grown in flooded fields where arsenic in the soil becomes more available to the plant. The arsenic concentrates in the outer bran layer, so brown rice generally carries more than white rice from the same field. That is a genuine trade-off, since the bran is also where the fiber and many nutrients live.
The FDA’s own research found that cooking rice in plenty of water, from six to ten parts water to one part rice, and draining the excess removes 40 to 60 percent of the inorganic arsenic depending on the type. Spices, especially turmeric and cinnamon
Spices are where lead is sometimes not an accident. Turmeric has been found adulterated with lead chromate, a bright yellow pigment used to make a dull root look richer, and in 2023 lead-contaminated cinnamon in fruit puree pouches caused lead poisoning in young children in the United States, which was followed by an FDA alert on several brands of ground cinnamon. You use spices in small amounts, but you use them every day, and a single contaminated source can carry a great deal. Protein powders, greens and fiber supplements
Powders concentrate whatever their source plant absorbed, and you may take a scoop daily for months. ConsumerLab has found lead in greens powders labeled organic and conventional alike. Plant proteins from rice and pea, algae such as spirulina, and fiber like psyllium husk all come from crops that take up metals from soil. In the news: In October 2025, Consumer Reports tested 23 popular protein powders and shakes and found that more than two-thirds had more lead in a single serving than its experts consider safe for a whole day. Plant-based powders came out worst, with about nine times the lead of the dairy-based powders it tested and twice that of the beef-based ones. There is still no federal limit for lead in protein powder, so the test results a brand chooses to publish are the only numbers you have. Read Consumer Reports’ protein powder results.
Baby food, formula and juice
Babies eat more food for their body weight than adults and are more vulnerable to the effects of lead and arsenic on development, which is why this is the one area with federal action levels. It is also where variety is the most useful single habit: a baby fed a wide range of fruits, vegetables and grains is not repeatedly exposed to the same source. A new label to look for: Since January 1, 2025, California’s AB 899 has required baby food makers to test each finished product for arsenic, cadmium, lead and mercury at least once a month, publish the levels on their website, and print a QR code on the package that links to them. It covers food in jars, pouches, tubs and boxes made for children under two, and it does not cover infant formula. If a pouch or jar you are buying carries that QR code, scanning it shows measured levels for that product, which is far more than any organic seal tells you.
Seaweed, root vegetables and leafy greens
A few other foods are worth knowing about even though they rarely make headlines. Some seaweeds accumulate arsenic from seawater, and hijiki in particular carries enough inorganic arsenic that food safety agencies, including the UK’s Food Standards Agency, advise against eating it. Root vegetables such as carrots and sweet potatoes grow in direct contact with soil, which is why the FDA allows a higher lead level for single-ingredient root vegetable baby foods than for other baby foods. Leafy greens like spinach can take up cadmium. None of these is a reason to avoid vegetables, which are among the most valuable foods you can eat. They are a reason to eat a range of them rather than the same one every day.
What the FDA limits actually cover
The United States has no general limit for heavy metals in food. The FDA instead sets action levels for specific products, mostly those eaten by babies and young children, under a program it calls Closer to Zero. The ones in force as of this writing:

Two things about those numbers are easy to misread. An action level is guidance, not a safety line: it is the point at which the FDA may treat a food as adulterated and take enforcement action, set at a level the agency considers achievable for industry, and it expects to lower it over time. And it only applies to the named categories. There is no federal limit for chocolate, spices, protein powder or adult rice at all, which is why Consumer Reports measured chocolate against California’s maximum allowable dose levels of 0.5 micrograms of lead and 4.1 micrograms of cadmium a day.
What is coming next: The FDA’s 2026 priorities for its Human Foods Program include work to establish action levels for cadmium and inorganic arsenic in baby and toddler foods, and to release exposure data for lead, arsenic, cadmium, mercury and PFAS as part of its infant formula review. You may also see a California Proposition 65 warning on chocolate, spices, protein powders and supplements. That label means the product could expose you to a listed chemical, such as lead or cadmium, above the level California sets as its safe harbor, and it applies to anything sold in the state. It is a useful signal but a blunt one. A warning does not tell you by how much the level was exceeded, some companies print it defensively without testing, and a product with no warning has not necessarily been tested at all.

This counts what the listing title and bullet points say, which is what a shopper sees before buying. Silence is not evidence of contamination: plenty of brands test and simply do not say so on Amazon. But it does mean a buyer cannot tell the careful brands from the rest by reading, and in cocoa, rice, juice and baby food, not a single listing gave them the chance.
The five that claim testing all stop at the claim. A line like “tested for heavy metals” tells you a test happened, not what it found, what limit it was judged against, or which batch it covered. A disclosure you can actually use names the lab, gives results in parts per billion or micrograms per serving, and ties them to a lot number, usually in a certificate of analysis on the brand’s own website.
How to read a heavy metals test result from a brand
When a brand does publish testing, it is usually as a certificate of analysis, a one or two page lab report tied to a production batch. It is worth knowing what to look for, because a document can look reassuring while telling you very little.
- The lab’s name and accreditation. A reputable report comes from a named independent laboratory, ideally one accredited to ISO/IEC 17025, the international standard for testing labs. A report on the brand’s own letterhead with no lab named is a claim, not evidence.
- A result for each metal. Look for separate figures for lead, arsenic, cadmium and mercury. A single line reading “heavy metals: pass” hides which metal was tested and what the number was.
- Units you can use. Results usually appear in parts per billion (ppb), parts per million (ppm) or micrograms per serving. One ppm equals 1,000 ppb. Micrograms per serving is the most useful for a daily food, because it accounts for how much you actually eat.
- What “ND” means. “Not detected” means below the lab’s limit of detection, not zero. A good report states that limit, so you know whether ND means under 5 ppb or under 500.
- The method. Heavy metals are normally measured by ICP-MS, a sensitive instrument that detects metals at very low concentrations. Its presence on a report is a sign the testing was done properly.
- The standard it passed against. “Pass” only means something if you know the limit. Some brands compare against California’s Proposition 65 daily levels, some against supplement industry limits, some against a standard of their own.
- A lot number and date. Crops vary from harvest to harvest, so a test from three years ago on a different batch says little about the jar in your hand. Match the lot number on the report to the one printed on the package.
A brand that tests every batch and posts the reports, searchable by lot number, is doing the most any food company can do. A brand that says it tests but will not show a result is asking to be taken on trust, which is exactly what organic certification already asks of you on this particular question.
How to lower heavy metal exposure without giving up these foods
None of this means cutting out chocolate, rice or spices. Exposure is cumulative, so the aim is to avoid getting a large share of it from one source, day after day.
- Rotate your staples. Swap some rice for quinoa, oats, barley or farro, and change chocolate and spice brands now and then rather than buying the same one indefinitely.
- Cook rice in extra water and drain it, accepting the loss of added nutrients in enriched white rice, or rinse it well before cooking if you prefer the usual method.
- Treat dark chocolate as a treat by the ounce, not a daily health food by the bar, and remember that higher cacao percentages carry more of whatever the cacao contains.
- Ask for a certificate of analysis before buying a daily supplement or spice. Brands that test are usually glad to share results; a brand that cannot is telling you something.
- Feed babies a wide variety, go easy on rice-based cereals and snacks, and offer water and whole fruit rather than a lot of juice.

When organic is still worth buying for these foods
Heavy metals are one reason to be choosy about a food. Pesticide residue is a separate one, and there organic genuinely delivers: certified organic crops are grown without synthetic pesticides and consistently test lower for their residues. So the sensible way to shop is to use each tool for its own job. Buy organic to reduce pesticides. Choose by growing region, variety and published test results to reduce metals. A product that does both, certified organic and tested with numbers published, is the one worth paying for. Questions about heavy metals in organic food
Does organic food have fewer heavy metals?
Not reliably. Organic rules govern farming inputs, not the metals already in soil and water, and organic certification does not require testing food for lead, arsenic or cadmium. Some organic products, including certain dark chocolate and cocoa, have tested higher in cadmium than conventional versions because of where the crop was grown.
Is organic cacao lower in lead and cadmium?
Not by virtue of being organic. Cadmium comes from the soil the cacao tree grows in, and lead mostly lands on beans as dust while they dry. Growing region and post-harvest handling decide both, and organic certification regulates neither.
Is brown rice worse for arsenic than white rice?
Generally yes. Arsenic concentrates in the bran, which brown rice keeps and white rice has removed, so brown rice from the same field usually carries more. Brown rice also keeps more fiber and nutrients, so varying your grains is a better answer than avoiding brown rice entirely.
Does washing or cooking remove heavy metals?
Only in some cases. Cooking rice in six to ten parts water and draining the excess removes 40 to 60 percent of its inorganic arsenic, according to FDA research. Washing produce removes surface soil and dust. Cadmium and arsenic absorbed inside a plant, and metals in spices, chocolate and powders, cannot be washed out.
What does “tested for heavy metals” on a label mean?
Only that a test was done. It does not say what was found, what limit the result was measured against, or which batch was tested. A useful disclosure names the lab and gives results in parts per billion or micrograms per serving, tied to a lot number, usually in a certificate of analysis.
Are heavy metals in baby food regulated in the United States?
Partly. The FDA has set action levels of 10 parts per billion for lead in most processed baby foods and 20 for single-ingredient root vegetables, finalized in January 2025, and 100 parts per billion for inorganic arsenic in infant rice cereal. Action levels are guidance for enforcement rather than binding safety limits. California also requires baby food makers to publish monthly test results behind a QR code on the package, and the FDA plans to set levels for cadmium and inorganic arsenic in baby and toddler foods.
What does “ND” mean on a heavy metals test?
ND stands for not detected, and it means the result was below the lab’s limit of detection, not that the food contained none. A useful certificate of analysis states that detection limit, so you can tell whether ND means under a few parts per billion or something far higher.
Is there a safe level of lead in food?
For children, the CDC says no safe blood lead level has been identified, which is why the FDA’s approach is to push levels in baby food as low as is achievable over time rather than to name a safe amount. For adults the practical goal is the same: keep exposure low and avoid getting much of it from any single food.
Should I stop eating dark chocolate?
No, but it is worth eating it in ounces rather than bars, choosing lower cacao percentages some of the time, and rotating brands, since results vary widely between products and batches. Consumer Reports found that milk chocolate tested lower because it contains less cocoa.
